Overall, there is a series of steps, beginning with the fresh milk and finishing with the finished ripen cheese.
At the beginning of the process, the raw milk can be prepared in two ways. Modernly, it is pasteurized. Then it is standardized and filtered by a machine. Traditionally, all of these mentioned steps can be omitted. Next the milk is poured into a big container. After that, fermented microorganisms are inoculated, and rennet is inserted into the container for coagulation so that the milk can turn into curds and whey. Following this, they are cut, stirred and cooked.
The next step is to put the curds and whey into a big tank and drain out the whey. The remaining curds are then milled and salted to make the fresh cheese (cottage and cream cheese). The process continues when the mixture is poured into metal molds and pressed to eliminate additional whey. Finally, the cheese is stored in shelves to ripen fully.
