Overall, there are ten steps involved in this process starting with raw milk and culminating with producing ripened cheese.
To begin with, there are two approaches that are followed. The first approach is traditional cheese-making where raw milk and fermenting microorganisms undergo inoculation in a container. The second approach is followed mostly where milk undergoes different phases such as pasteurization, standardization, and filtration and is then mixed with an enzyme called rennet in a container. From this step, the same process applies to both methods. curds and whey are formed in a container and this process is called coagulation and the milk is made into curds through continuous cutting and stirring and the whey is drained out from the container.
Next, curds that are formed are sent to the milling phase where salt is added, we get fresh cheese. In addition to that, cheese on the conveyor belt is poured into the molds and pressed to spread the cheese evenly and the additional whey is drained off. Finally,it undergoes ripening where it lasts for few days after which ripened cheese is ready.
