The line graph illustrates the levels of spread consumption over the period of twenty-six years, starting from 1981, concretely via three commodity categories, namely margarine, low fat, and reduced spreads and butter.

It is clear that the number of people consuming different types of spreads drastically fluctuated over the years shown. More specifically, while the figure for margarine consumption stood at a quite stable level, the value for low-fat use significantly increased, and the figure for butter consumption continuously declined.

In 1981, the proportion of butter consumed in grams registered the highest statistic, while the figure for margarine fell to approximately one-third of that amount. At the same time, seemingly, there were no consumers who had a liking for low-fat nourishment or were willing to reduce spreads in their daily meals. Notwithstanding in 1996, in the food consumption market, there was a sudden sharp rise in the demand for low-fat and reduced-fat spreads. The number of people who would like to decrease the fat content in their diet kept sharply rising until 2001 when it peaked at respectively 82 grams. Conversely, the amount of butter and margarine consumed both experienced a downward trend.

By 2007, the figure for margarine consumption had fallen to 40 grams, and the number of people consuming butter had been only one-third of that in 1996. Also in 2007, the number of low-fat products recorded the highest consumption, while this figure in 1996 was almost zero.
