The reading and the speaker discussing about wheat as first grain which ancestor used in earlier period, but both them argues things quite contrast ways.
Firstly, reading passage says that earlier people know about the nutritional value about the wheat that reason they used it for making bread and moreover, when they found difficulty eating because of hardness they might have made that grain into the paste form so that it is easy to easy and softer. But speaker refutes this point by saying that keeping the grain in wet and air contents area more easier work for making grain became softer than grinding it. It is more logical point.
Secondly, reading passage states that they might have used the fire to toast the bread because fire is simplest form and it does not need any technical assistant. Further more, keeping seed is not a good idea to store the food so they made past form. But professor contrasts this statement by explaining that keeping the wheat in natural environment itself will make wheat int bread and make it more softer. So drying up things much easier than keeping in fire.
Thirdly, reading passage claims that they knew about fermentation because they used to keep the wheat past on the open area and due to the past form they attract the yeast more readily. But lecturer oppose this point by stating that keep the grain in the moist and air area itself will helps the grain to fermentation and there no need of paste form.
