The graph below compares the amounts of three kinds of spreads (Margarine, Low fat and spreads and Butter) that were consumed between 1981 and 2007. Overall what stands out from the graph is that the consumption amount of Margarine and Butter dropped significantly, whereas the level went up markedly for Low fat and spreads over the time frame mentioned in the question. The units are measured in grams.
Looking at the details, there were similar trends on the consumptions amount for both Margarine and butter. With regards to the use of butter, it stood at around 141 grams in the year 1981. Then, the following years the amount increased sharply to just under 160 grams. However, there were rapid decline to around 50 grams at the end of the period. Similarly, beginning the period at approximately 90 grams, 1996 to 2001 witnessed some fluctuations which was eventually followed by dramatic decrease in the year 2007.
On the other hand, the opposite course was noticed for low fat and spreads which meant that it started at around 15 grams in 1996 followed by sudden rise rocketing to just over 80 grams in 2001. Next, the trend declined steadily to 65 grams in the final years.
