These diagrams illustrate the process how to produce chocolate for consumption and industry and also the percentage of parties that affect chocolate bar’s price in the market.
In the beginning of chocolate production, cocoa is ground to separate it with waste which will not used in the next step and to yield cocoa liquor that can be processed in two different ways. The first way is pressing cocoa liquor into cocoa butter and cocoa powder which is useful for food industry. The second way is produced chocolate bar by appending cocoa liquor itself with cocoa butter, sugar, and other ingredients in industrial chocolate.
The chart shows that there are five parties that affect chocolate bar’s price. The highest is cost of ingredients and overheads by 37% from the price, while supermarket is the second by 34%. Tax, chocolate company, and farmer affected chocolate bar’s price by 15%, 10%, and 4% respectively.
Interestingly, supermarket is influenced the price more than eight times compared to the farmer. Overall, it can be concluded that the cost of ingredients and overheads in the process of chocolate production is the highest among other parties.
