The given diagram describes the process of producing two types of Pu-erh: raw tea and ripe tea.
Looking from overall perspective, it is readily apparent that the processes for two varieties of tea in Pu-erh have the same initial stages such as frying, rolling and drying.
It is clear from the finished products that the first three stages of the production of both teas are similar. The leaves of tea trees are rolled after a process of being fried in a large skillet. The tea leaves are then spread evenly on a large patch to ensure drying under the sun. The final result we get is the loose raw tea.
After completing these three common steps, the loose raw tea has to go through two different processes including 3 steps, which create the two teas’ flavors. With a reference to fermented tea, first the raw tea is compressed. This is followed by aging by storage and then the PU-erh raw tea become available for use. Regarding the other phase, the loose raw tea is fermented by mold to produce loose ripe tea. After the fermenting process is complete, the loose ripe tea is compressed to form the final product - the Pu-erh ripe tea, which is ready for sale.
