Overall, the structure of a home-based smokery consists of three parts, connected by pipes, beginning with a hole underground for air to enter and ending with a spacious box for food-smoking.
First of all, air will flow into a chamber with a lid on top to control the entry of air. Air, then, flows through a path into the closed section and serves as the fire maintenance to burn logs to produce smoke. After the second stage, smoke will flow through another pipe to the next place that has bricks placed on top. The third chamber is situated below the ground level and is connected to a box. The ending stage is where smoke penetrates through the bricks from under the ground level to the main box, where food such as fish and meat is smoked and processed.
