The given diagram illustrates how cocoa beans are processed.
By and large, there are three steps in cocoa processing from picking beans at the beginning and consuming at the end.
Firstly, at step 1, after picking, whole beans are separated. While shells are removed, core beans go through the drying and pressing process. In step 2, after pressing, beans have changed into cocoa liquor. A part of this liquor continues to be pressed to produce cocoa cake which is gridded into cocoa powder for sale and then delivered to customers in step 3. However, the other product of further pressing is cocoa, which is raw material for the cakes and drinks, or chocolate industry in the final step.
The other part of the cocoa liquor that is not pressed in step 2, but is further refined. Following by addition of sugar to produce industrial chocolate. This mixture is further processed to create finished chocolate products in step 3. Finally, the final products of chocolate are distributed to consumers.
