The chart illustrates traditional and modern methods of manufacturing black tea and its step by step process. The process goes through various stages to produce the end product.
In the initial step farmers pick fresh tea leaves from the plant, in order to ensure top quality they only pick bud and two top leaves. Then it passed through a process called, withering where air passed through leaves on the rack to get the moisture out. In the traditional method, leaves then rolled flat and then broken through a process called rolling to release enzymes from the leaves. After that, the processed leaves enters in to the fermentation process, as a result the colour of leave change to copper color. In the end it's being dried out using hot air dryers to get flavor and aroma and also clear the moisture from the loose tea.
In contrast, the modern method use cut, torned and curled leaves to produce tea bags instead of loose tea by a process called cutting. Before that it goes the same two initial steps just like the traditional process. The cutting process creates smaller granular pieces of tea leaves. Then it pass through the similar process of traditional methods fermentation and drying to produce the tea bags.
In conclusion, inorder to produce black tea both traditional and modern methods follow almost same steps except in the stage two.
