The diagram illustrates the process of making a home smokery and the way of is used.
Overall, there are three main stages in this process, beginning with collecting the air and ending with smoked foods are done.
In the first step of the process, the air is collected by entering a chamber or box which is controlled by opening and closing a lid. After that, the air goes through an air pipe when it is brought into the second chamber which has a lid at ground level.
In the next step, the second chamber contains stones, fire, and logs inside which are burned to produce heat and smoke. Following this, heat and smoke come into the last box through another pipe at the base, passing some bricks which are placed on the top of this pipe’s mouth. The heat and smoke rise to the top of the box, where fish and meat are hung to be dried and smoked.
