Making cocoa products
The provided figure illustrates the process of making two products related to cocoa.
There are two big common stages in the process of turning the raw cocoa into cocoa liquid. From this point, each cocoa product has the last stage consisting of a different making process with many small steps.
In the first stage, the fresh cocoa is harvested and podded to keep the cocoa bean which is then fermented and dried. The next stage consists of four following steps with cocoa bean cleaned to remove the dust, winnowed to take out foreign objects or the small beans which are unqualified, roasted at a proper temperature and milled into cocoa liquid.
One part of this liquid is pressed into liquid butter and another one is combined with alkalizing to make cocoa cake. At the finall stage, two products from cocoa experience various steps to accomplish its own process. For solid butter, liquid butter is used to for filtering and then tempering process. And in order to make the end other product: cocoa powder, the process ends with cocoa cake broken, pulverised, cooled and packaged.
